Kitchen Manager


As the Kitchen Manager for GCF Hawaii you'll lead and coordinate our kitchen production team to ensure that all production is completed on time and in line with GCF Hawaii standards. You will ensure that your team follows all procedures consistently and drive measurable improvements in productivity. You will be responsible for ensuring the quality of menu items, controlling food and labor costs, and hiring and training all new and current kitchen staff, and to provide a safe, fun and profitable workplace. You will own food safety, team member safety, and equipment maintenance.

We are a fast-growing and rapidly evolving company; the ideal candidate is a self-starter who has at least 2-3 years of experience working independently to set procedures, uphold standards, meet production goals, and manage a team in a food service setting. Our fast paced environment demands passion, multitasking, high attention to detail, the ability to perform with a sense of urgency, and keen problem solving and organization skills. Must have experience with food safety and sanitation rules and regulations.

Job Duties:

  • Ensures the completion of all meal production within company set time limits and budgets.

  • Responsible for meeting/exceeding all company specs on food quality and recipe consistency.

  • Develops and trains kitchen staff to meet or exceed company standards on product quality and consistency.

  • Coaches, praises, and disciplines employees appropriately to create a good work environment.

  • Practices proper stock rotation methods for perishable and non-perishable items.

  • Assigns kitchen prep as needed and follows all proper food safety guidelines.

  • Plans, coordinates, and monitors all purchasing, sourcing, and receiving activities

  • Assigns daily, weekly and monthly cleaning projects

  • Responsible for keeping all equipment cleaned, organized, and serviced.

  • Thrives in a systems oriented environment: Put sustainable, repeatable processes in place. Hold your team accountable to following them and empower your staff to suggest process improvements.

  • Acts as the role model for outstanding food quality and safety standards

  • Develops and strengthens partnerships with suppliers

  • Uses logic, common sense, and reasoning to identify the strengths and weaknesses of alternative solutions, conclusions, or approaches to problems and escalate to management

  • Keeps detailed records

  • You have a minimum of 2 years of successful kitchen management experience in a food service environment

  • You communicate clearly and concisely, verbally and in writing.

  • You are comfortable with numbers, measurements, and conversions.

  • You have a high level of computer literacy and embrace technology as a tool.

  • You are flexible, adaptable, and open to change in the workplace

  • You are honest and trustworthy with company resources and information.

  • You don’t settle. You challenge the status quo and push your team and the company forward.

  • You have open availability.

  • Experience with Cheftec is a plus.
